In Korean BBQ, maintaining high heat and the proper grill temperature is essential to preserving the meat's natural flavor. Before placing meat on the grill, ensure the surface is sufficiently heated to prevent sticking and to lock in the juices.
How to Check Grill Temperature
- If a drop of water evaporates instantly upon contact, the grill is at the right temperature.
- When light smoke begins to rise from the grill, it is the perfect time to start cooking.
- Avoid cooking at too low a temperature, as this can cause moisture to escape, resulting in tough meat.
Steps to Lock in Juices
For the best results, wait until one side is sufficiently browned before flipping the meat only once. Flipping too frequently prevents the internal temperature from staying consistent, which can diminish the flavor. For thick cuts like pork belly or shoulder, searing the exterior over high heat to induce the Maillard reaction (the chemical reaction between sugars and amino acids that enhances flavor) is key. Afterward, cut the meat into bite-sized pieces and finish cooking the cross-sections to achieve a crispy exterior and juicy, tender interior. If heat control proves difficult, use the edges of the grill to keep the meat warm without burning it.
